La Compagnie des Pruneaux produces organic and conventional prune juice concentrate. Concentrate is obtained after water reduction. The production process is the same as the prune juice with an additional step at the end of the process : the concentration workshop which leads the concentrate up to 70°B.
Prunes juice concentrate are then shipped in 1300kg IBC.
Prune juice concentrate has a high level of sugar, it is praised as a sweetener in the food industry. It can also be used as a coloring agent, flavor enhancer, cereal bar binder and even humectant (in order to prevent cakes and biscuits from drying out).
